Recently bought a a Fitbit Flex 2 and I have noticed that I can’t set the pool length. Other devices (such as inspire 2 etc) can be configured using the watch it’s self although the flex 2 doesn’t have a screen. I read an article about how you can change it by going into “advanced settings” on the Fitbit app but it seems I can’t find that option. Any ideas or solutions?

You are right, and I informed our team to update the help article.
You'll find the settings with this path.
Fitbit App>profile picture>Activity & Wellness>Exercise>swim settings.
Don't forget to sync your Fitbit after any changes on the app, so that those are saved on the Flex 2
