I am trying to keep track of walking on uneven surfaces but my Fitbit HR doesn’t have it, does anyone have any suggestions on how to do this?

@B3 The Fitbit Inspire does not have the ability to count stairs/floors/elevation.
The best way to find your calorie deficit is to run some online calculators you find on Google.

I'm not entirely sure what you're asking; what constitutes an "uneven surface"? If you're talking about walking on a hiking trail, simply choose the "Hike" activity instead of the "Walk" activity, and you should be good to go.

Then choose the "Hike" activity and you'll be good to go.

depending on the fitbit you have, there is a feature that counts floors and altitude. If that isn't the model you have, then hike is your best option for the type of activity you are doing. it won't count altitude, but it will count steps, HR (depending on model), calories, etc.

On your dashboard with tile for Food Plan.
It'll show estimated what you burned on days, what you logged that you ate, and therefore the deficit between them.
Unless you didn't eat less of course.
If you mean what did you setup your deficit as, again look at Food Plan - More info and settings.
In other thread you said at healthy weight already, so no weight loss needed - in which case make your current weight and goal weight the same.
Don't need a deficit if not trying to lose weight.
