I was pre-diabetic but after maintaining a healthy diet during the pandemic, my A1c is now at a very healthy level. Yay! Since most fruit has too much sugar for me, what are other healthy, low carb snack ideas? I like almost all vegetables but what can I do to snazz them up? Or what are some unusual veggies you have tried and liked?
Vege sticks with home made hummus work for me. I don't like most commercially available hummus, but my home made one is yum and less fat too!

Great topic, @SunsetRunner! I usually have a portion of raspberries and Greek yogurt and for no sugar options I like broccoli or even pistachios 😀
I've heard green pepper is great for you as well, so I always include it when making scrambled eggs or Omelette. 😎
@BarthdeRosa - Thanks for the tip (and recipe) for tzatziki sauce. I made it for the first time yesterday. Had it with broccoli and cucumbers. I think I have a new lunch for my rotation!

Best AnswerTzatziki is wonderful. I have a couple of tablespoons with grilled protein, (Chicken Kabobs mostly) for a low carb lunch, but also as a dip and sometimes a salad dressing. Very refreshing.
I make egg bites or frittata on the weekend, portion it out for snacks and freeze it for the week. Grab and go, it is good either hot or cold and has a good amount of protein for relatively few calories. You can add in spinach, tomato, really any chopped veg to add healthy fiber as well

Best AnswerA frittata is basically an omelette but finished in the oven. I use 6 eggs, whisked with salt, pepper, a 1/2 tsp of ground mustard and a dash of half and half. mix together, set aside and heat up an oven proof skillet on low. Sauté any meats or veggies that you would like in the skillet, (ham, sausage, bell pepper, etc) pour in your egg mixture, add shredded cheese if you like and when the bottom has set, slide the oven proof pan with the eggs into a preheated 350 degree oven for 12 - 15 minutes, OR finish under the broiler for 3 - 5 minutes. Check it to see if it is puffed up. You can also butter muffin tins and make single serving egg bites to take with you.
