I admit to being lazy.
When I find a good price, I stock up on Amy's enchiladas, burritos, or rice bowls, and keep them in the freezer. Then I take one for lunch. They're fairly nutritious, satisfying, and I know how many calories are in them.
It works for me and is better than foraging!

Rotisserie chicken. You buy one per week, portion it, freeze it and you're good to go.
Tacos? Done.
Chicken soup? Done.
"Fried rice"? Done.
I have a friend who cooks rice and pasta, portions and freezes them. I'm not sure how to go about thawing them, but it seems like something to try.
Also, I always have tomatoes, onions, iceberg lettuce, sauce, dressings and lemons on my pantry, mix them up!
Best AnswerUse leftovers! When I cook chicken breasts, I grill (indoor grill pan) at least 8 large skinless chicken breasts. That way I have both cookless lunch and dinner options for almost a week for two. I weigh them and cut if necessary to get the right weight for me before reheating in microwave with suitable vegatables.
Veggies:
Bake multiple sweet potatoes; store in 'fridge; peal and reheat sprinkled with pumpkin pie spice.
Cook a big batch of rice (I prefer combo of brown and wild rice); measure amount and heat with meat.
Green beans (fresh) - blanch, chill, and put in 'fridge, then reheat with meat and other veggies.
There is no end to what you can prepare ahead of time - just takes some upfront time to prepare.
Needs microwave -- microwaves are cheap - get office workers to chip in for buying one for the office. Most large companies have them.
