In addition to the recipes from the link Betpchem provided, you could keep it simple by making a pilaf style rice.
Basically, cook some rice normally, but with a variety of seasonings in the water. Separately, sautee lots of different veggies and mushrooms that you like. You can also mix in different types of meat into that if you prefer. Once both the rice and sauteed veggies are done. combine them together in a large bowl and enjoy. It is good cold or hot.

In the past, a favourite of mine was rice with chicken and a couple splashes of teriyaki sauce and then a veggie such as steamed broccoli or steamed green beans on the side. Thinking I should make that again soon haha 🙂

The only rice you should be eating is brown rice for fiber and additonal energy( eat rice if you plan to be very active the next day). Boil the brown rice and let it chill. Then use a Wok with a little olive oil to stir fry it. Use a Badia seasonings of your choice, along with red, yellow and green chopped onions to give it a taste. Add eggwhites for additonal protein.
Do not add any other additional sausces and vegetables to it. No need to make the rice itself a high calorie meal if you're eating it with something else.

There are lots of grains to substitute for rice. I like to eat quinoa, myself. But there's nothing wrong with rice either. I made a delicous chicken fried rice dish for dinner the other day that I am eating for lunch all week. The key, in my opinion, is variety. I get tired of the same old thing all the time.

I love rice! I'm a huge fan. Really, I'm a happy kitten eating a bowl of rice with some yummy sauce in it.
This week I learned how to make Beef Soboro and it was delicious! Instead of Sake and Oyster sauce, I used cooking wine and Worcestershire sauce.
Heaven.

I love rice. I eat it most days as it is so versatile. I make sweet and sour sauce, chilli, black bean sauce, etc. It never gets old. I prefer white rice as it is easier to digest and the nutritional value differance between white and brown rice is negligable imo. There is more than enough fibre in the beans pulses and vegetables that I add to every rice dish.

I always ate white rice myself because I noticed there wasn't much difference between white and brown rice nutritionally. Brown rice never seemed to live up to the hype.
But I like the idea of the bulgar. It's got a ton of protein. I've never had it before but I'm looking forward to trying it.
