Not 100% sure exactly what the wheat belly diet is, but I have been 100% grain free, dairy free, sugar free and legume free for almost 3 years.
I had a burger from a local burger place a few months back. The way my body responded, you'd have though I had been poisoned.

it's based on the book by this person: http://www.wheatbellyblog.com/ for the most part, i see it as paleo + full fat dairy.

Carb withdrawal (wheat included) is as strong as any other addiction. I realized how hard it was for my husband to quit smoking when I went carb free. I cried, I yelled, I was jonesing for a piece of fruit or popcorn! After I removed these things from my diet, and got through detox, I felt great and did not miss them. However, it is easy to fall off the wagon and "just have one" and back-slide back to unhealthy. I did, and now I am in worse shape (medically speaking) than before! So, here I go again!

Same here. I actually put protein powder (pea based as I have a dairy & soy issue) in with the coconut oil and butter, blend away and it tastes like a Starbucks' drink without the extra sugar (HFCS?) and dairy. If I want it richer I add unsweetened Almond/Coconut milk and a little stevia.

I have a Ninja and it blends nicely as well. Have to have that speed to blend the oils with the coffee!

Caffeine give a little wake up boost in the AM, coconut oil and butter provide the fat for your body to burn. I add protein powder to provide, well, protein first thing in the morning.

Well as a person with celiac it is tempting to go gluten fre and feel better. Yes is is a challenge. But going wheat free isn't for everyone nor it should not be confused with wheat is bad. Look just becuase wheat and high starch foods are "bad" or "unhealthy" due to the high carbs and stuff doesn't mean you should avoid them. A well rounded diet that includes grains, fruit, veggies, dairy and the right amount of protien should be considered.
Take my advice from a celiac, it might be tempting but you might be losing critical nutrients in which might be hurting yourself.

ANY time I eat fast food my body responds as if it has been poisoned. Awful! Diagnosed as gluten intolerant and lost 14lbs in 6 weeks just by eliminating gluten. I have lost 22 by eliminating most grains. At this point, I only eat brown rice and gluten free granola on occasion. I found dairy during the day increases my following morning glucose and causes constipation.

If you really have the celiac disease, eliminating gluten shouldn’t be a "temptation", it would be your only sensible option, wouldn’t it? And for the 99% of the population that doesn’t have the celiac disease, there are no particular benefits in avoiding gluten.
