Hey All,
I have only made rabbit a handful of times but never found a recipe I liked until last night. I basically cut the ribcage of a young rabbit to splay it in a baking dish and salted and peppered both sides. Then I mixed a little olive oil in a small ramekin with crushed dried rosemary and minced garlic and rubbed the whole rabbit down, making sure to get the mix on all parts. Then I baked at 450*F/230*C oven for 30 minutes. Easy and delicious! A good side is mixed carrots/onions/potatoes coated with hebes de provence in the same dish or oven.
Okay I showed you mine, now you show me yours. Do you guys have tasty recipe suggestions for rabbit?
