My ionic stopping syncing few days ago and now my Bluetooth option on my tracker has disappeared I've restarted the tracker numerous times and reinstalled the app this really frustrating issue and now i cannot update the software. Help

What phone do you have? Anything new help will tell you its a not supported phone. I've had the same issue and have tried to sync via desktop, tablet etc and it still doesn't work sorry. You can expect Fitbit support to start ignoring you once they realise your phone isn't supported and put all issues down to that.
