@Dsjamalone Welcome to the Community! Have you tried changing your sleep settings to be "sensitive" instead of "normal"? Changing this setting can help your tracker recognize movement while asleep.
To change your sleep setting on the fitbit.com dashboard, go to Settings > Devices > and scroll down to Sleep Tracking.
Let me know if this helps!

I'm having the same issue. I have sleep sensitivity set to Normal, but at one point during the night, I walked to the bathroom and back, so I figure it would detect *something*.
I'd lost my charger for about 10 months (I know...!) and finally bought a replacement that I charged with yesterday. I also got a third party silicone wristband to wear it to sleep with, which I used last night. Unlike the wristband I got from Fitbit, it positions the One horizontally across the wrist instead of vertically parallel to the arm. It tracked steps while I was getting ready for bed with it though, I figure it would still detect movement...
I've restarted the tracker. My Fitbit version is 60, which appears to be up to date. I can't think of anything else, and I can't find others having the same problem with more info. I'll update after tonight, but I'll try any other suggestions.

I tried your suggestion. Not sure whether it helped or not, since it still didn't load the restlessness data for the night before last. I guess it never will... It did load the data for last night. So I guess it's working going forward. *shrug* 🙂

Hello @Dsjamalone and welcome aboard to our community @nuggit. The One since does not have autosleep, as you know, require you press and hold the button for a couple of seconds to start the sleep mode. In your case @nuggit, if you are not able to see your sleep data you can do what @Dsjamalone mentioned above by logging manually this data on your sleep section of the Dashboard. If you need the steps for this please check the post of my friend @SilviaFitbit. As long you were wearing your One, as soon you enter your sleep time, all your data should appear.
Hope it helps and see you around.
