It can hold up to 7 days detailed data. If you delay syncing beyond that it will start holding data at a summary level only and can hold up to 30 days at a summary level before you start losing data.

I have only gone 6 days without syncing , but the data doesn't appear on my Dashboard. I did replace the battery before these days. When I synced it today it had yesterday and today to date, but not the previous exercise on Sunday & Saturday. Why would that be?

I'd recommend syncing your tracker once again and finally perform a restart:
Also, just like @SteveH said, most Fitbit trackers record detailed minute-by-minute data for seven days and can store daily totals for up to 30 days.
