Thanks that worked. It would be helpful if Fitbit updated their help pages to match.

The following instructions......
From the Fitbit app dashboard, tap the + icon > Set Alarm > Set a New Alarm.
Select the alarm time and frequency, and save.

I agree but it must be a bit awkward for them while the update is rolling out, with some on the new version and some on the old. Hopefully, they'll quickly update the help files when the rollout is completed.
