After the last fitbit update, my screen has been far too dim to read, and I have tried all the suggestions on various forums; I have restarted it multiple times (both via restart button and via the charger method), changed brightness settings and back, and made sure that the device is fully charged. I have also noticed that many times during a workout it has stopped tracking it. This is quite unfortunate and incredibly annoying and I was wondering if there was any way to fix this?

Hi @ellenor0707, welcome to our Fitbit Community. I'm sorry to hear that the screen of your Charge 3 is dim and hard to read. I'm also sorry to hear that it stopped tracking your workout. By the way, thank you for trying to get this issue resolved before contacting our forums.
Please try changing the clock face to one developed by Fitbit, not a third party clock face. After this, monitor your tracker and see if the screen is not dim and it doesn't stop tracking your workouts.

Thank you for getting back to me! I have tried that now as well, but my fitbit has always been on the default "mod clock" clock face. It is worth noting that it is difficult to see regardless of what is shown on the display, such as during the workout feature or by viewing stats, not just the initial clock screen.
