I have tried to set the clockface to the 'Analog Stat' showing an old waths with my steps below. When I selest this one I will see both the 'Anaæog Stat' and the 'Analog Date'. It is not possible to select any of the 2, when I update using the 'Select' button I get the 'Analog Date'.
If I try to select the 'Analog Date'or any other clockface I only see the selected one and it updates to that one.
So you might have some software to update 😉

While reading your post I was wondering if by any chance you're getting an error message when you update your clock face? Also, I was wondering if the mobile device you're syncing with is included in our list of supported devices? You can see the list at: Which phones and tablets can I use with my Fitbit watch or tracker?
Please keep in mind that when a device is not supported we cannot guarantee its functionality with the Fitbit app. It might work at a certain time and then it can stop working out of nowhere after an update. This is because the app is not optimized to that device and any change could impact the performance.
I'd recommend trying the steps below to properly update/change the clock face on your Charge 3:
