Hi, my partner is a night worker and she starts at 10pm, I’m trying to find a way to start her exercise tracker at that time so she can monitor her exercise each shift at work, at the moment it resets at midnight, is there an easy way? I’ve searched all settings and cannot seem to do it, many thanks

It's not possible to change the reset time from midnight at the moment.
There is a popular feature suggestion to add this and if you'd like to add your vote you can find it at:
Note, though, Fitbit's comment that they don't currently have plans to make this change. Hopefully, with more votes they will reconsider.

Change the time zone and cheat on fitbit. Then midnight will not be actual midnight when it resets.
Fit bit will show a different time to your actual time, but you are aware of this. Say delay time by 3hrs.

You can also start the treadmill mode at the beginning of the shift.
I use to do this with my 3pm shift that often lasted for 15 hours. With 20-30k

Make sure you use the treadmill mode. The walk mode would also work but you will need to first disable gps.
With treadmill you do not have to worry about the gps.
