I got a notification this morning when syncing that an update was available. When I tried to install it I had to cancel as my Fitbit Charge 2 was charging at the time. A message said that I could update later on the Devices screen. I am not sure what this means and can't seem to access any update facility.

Let me help you with updating your Charge 2. You should be able to get the option on the app, just tap the account icon and the top right corner and you should see an option next to your tracker's icon. You can read more about this here.
