I am knitting every evening and my Fitbit is registering this as steps taken! there is definitively something wrong

Fitbit detects steps from the normal swinging of the arms while walking. Being worn on wrist, it cannot actually know what legs are doing. This leads to some step count errors, which are usually small compared to full day's step count. But certain activities with regular rhythmic wrist movement, such as knitting, look just like walking to fitbit on your wrist, and can lead to significant step count errors. For these activities, it can be helpful to take fitbit off during these activities, perhaps using this as a time to charge it.
Calories, however, are based on heart rate, not steps, so if you leave it on, even though your step count is exaggerated, calories burned will not be adversely affected.
