Just bought a Charge 3 yesterday. Love it so far but I have noticed on this second day of use that it has recorded my steps walked as 3,620 and calories burned as 1,821...It's about 5pm now and I'm slightly doubting that I have burned that many calories. Looking at the Log and it shoes 1,720 every day for the past month or so, even though I just bought it yesterday. Looking for a remedy to this gross exaggeration of my activity.

Fitbit includes your BMR (basal metabolic rate) calorie burn, calories you are always burning by being alive, typically at least half of total calories per day.
See How does my Fitbit device calculate calories burned?
These are credited even when you are not wearing the tracker.
Also they are filled in on history as far back as you look. The 1720 calories are your BMR daily calorie burn.

Okay then is there a way to track only calories burned from walking, exercise, etc?

You can manually subtract your BMR (1720) from you daily total each day. That's about it.
