I had the same issue. If you click on the steps and then on the list select the steps for Monday, you will see a graph for the day with the correct steps on it. Tap on graph and you will see your actual steps for Monday.

Sorry to hear that your steps didn’t reset at midnight and for the delay in my response. This may happen when there is a change in timezone (due to travel or DST changes). You can restart your device as this will help it reset the following midnight but it won’t remove the steps from the affected date.
