I want to take off old watch i don't use. when I am putting new one on it says already have watch registered

It says already have watch registered; next asks if want to replace it.  If say yes, then it gets rid of the previous one for you and replaces it with the new one;  does it all for you.

Before posting, re-read to see if it would make sense to someone else not looking at your Fitbit or phone.
