I am having issues with logging my exercise. If my Fitbit automatically picks up the exercise, it records it at the correct time. However, recently all of my logged exercises have changed to 7 hours before they actually happened (9 am became 2am) and I am unable to correctly log exercises unless I subtract 7 hours from when they have actually occurred. I have tried restarting, re-pairing, re-installing the app, resetting the time zone, everything!

@AlexaGcole Welcome to the Community. Thanks for the details mentioned and the troubleshooting tried.
It's pretty weird that your exercises don't have the correct time on your Dashboard. In this case, I would like you to log out from your app and force quit your app. If you're still experiencing the same, please attach a screenshot to your next reply and let me know the mobile phone you're using.
