Is there a way to have the screen display stay "on" for more than a couple seconds?  I lift my wrist and the screen displays but it goes black within seconds, before I even have a chance to scroll through the various options.  I'd like it to stay displayed for longer.

There's nothing you can do about that - just have to learn to be fast.

Before posting, re-read to see if it would make sense to someone else not looking at your Fitbit or phone.
