Can you customize the interval workouts time for seconds worked and seconds rested. Can you change it depending on what kind of H.I.I.T. you are doing. For example one day it could be a Tabata workout 20 sec work and 10 sec rest or another day 45 sec work and 15 sec rest. This is for Fitbit Versa 2

Yes, you can do this, but you must change it each time in the Exercise Shortcuts in the app. I apologize if I give you incorrect steps, as I have a Versa 3 on my account. If I remember correctly, tap on your profile picture > Versa 2 > Exercise Shortcuts > Interval Workout > adjust the move/rest/reps, then sync your Versa 2.
Sorry, but there is no way to save multiple workouts. ☹️
