After having this problem with my last Fitbit inspire, I am having the same problem with my versa 2.
After a fresh reset, my watch will sync manually very quickly (5 seconds or so). All day sync is activated but my fitbit will not sync data unless I open the app and sync manually. But after a few days of not using the app, the manual sync will start to take 30 seconds to a minute to sync, which puts me off using the app. As features such as my sleep cannot be seen on my watch unless I sync it first. It’s very annoying as I want to be able to check my sleep data whenever I want to and be able to check it quickly. I don’t want to have to worry about syncing manually every 30 minutes to stop it from having a backlog of data
phone: iPhone 12
watch: versa 2

Every time we get an update it's the same. Getting sick of it..

Hi @Callumgibbs45 - this would seem to be a phone settings issue.
Verify that there is no battery optimization shutting down the Fitbit App or Bluetooth.
Your phone has to have location and Bluetooth always on and the app running in background.

I’m experiencing the same since switching from Android to iPhone 13 (not by choice). I can’t find any battery optimisation settings where you can change the preference for individual apps like on the Android based phone.
