I have a Versa 2. If I turn off the heart rate monitor, will this also stop the monitoring of sleep and all of the functions that the heart rate reads?

Yes, that would stop all heart rate functions.  I expect you would still get sleep measurements, but just based on movements and not heart rate; i.e. old style sleep without sleep stages.

And I expect you would still get calories burned, but based only on steps, with step speed the only approximation of intensity.

Before posting, re-read to see if it would make sense to someone else not looking at your Fitbit or phone.
