How do you change the instant start workout on Versa 2 when you long hold the button to a different activity?

For instructions on how to customize the shortcut button on your Fitbit Versa 2, please visit this article, open the menu "Ionic, Versa, Versa Lite Edition, and Versa 2", scroll down until you see "Use the button shortcuts" and follow the instructions.

Unfortunately I spent about 20 minutes doing this and all options and versions possible combinations using their advice and it did not work 😞
