Is there a way to have the notifications (eg, caller name when someone is calling you/message) automatically light up, and without having to press the side button on the watch to see the caller/notification?  I'm using a Galaxy S7. Thank you

No, at the moment that is how they work. There have been a number of requests for this feature, so how about going and voting for THIS feature suggestion. The more votes the more likely it is to happen.
