Looking to purchase a versa 2, I am wondering if I can download the songs from Spotify with my premium account to the watch and leave my phone at home whilst connecting the watch to my Bluetooth headphones and still play the music out on a run.

Sorry, but no, not with Spotify.  It acts only as remote control to Spotify on your nearby phone.  You can download personal music, and playlists from Pandora and Deezer, each with Premium accounts.

Before posting, re-read to see if it would make sense to someone else not looking at your Fitbit or phone.
