I received a Versa 2 for Christmas. Everything worked great until the latest update. Now the screen almost never swipes (in any direction). When I restart it (by holding the button for 10 sec...), it will work as its supposed to a few times and then stops swiping again. I sync frequently to the app multiple times a day.

Try a Factory Reset by swiping left to Settings and then About, Factory Reset.

I had this as well with the Versa 2 which I bought on Dec 15, last year. It happened before I updated to the latest firmware. After restarting by pressing the button more then 10 seconds, it seemed to work again, for a while. After the firmware upgrade it was worse (might or might not be related to it), but the screen acted on its own. Did not respond to me, but was randomly switching on and changing screens. Usually ended up on the lock screen where it entered lots of invalid codes.
Then via the phone I needed to unlock it again. The communication between the phone and the watch was fine. But I could not use it anymore. So I send it back and received my money back. I decided to give it another go and bought a new one. So far everything is fine. I'm suspecting that a bunch of Versa 2 which were sold around the Christmas period have problems with their touchscreens.

After a reboot go into Settings. Change the Screen Wake option to Manual (Button). This should fix it until Fitbit fixes the auto wake option. I've been trying to get the word out that the manual option works. Do a search for "wont swipe" and you will see my responses. Try it and see if it helps. Its helped others.

Any update on this from those that have had issues? I've got the same problem (won't swipe) but does not correct with a reset.
