How I can synchronize my watch with my Apple phone. Was not using it for a week or more

Before considering other options, could you please confirm if you already tried all the steps listed here to resolve syncing problems?
In addition, please make sure to check if the mobile device you're using is listed here as a compatible device and that the Fitbit app is updated to the latest version available at the moment.
