My fitbit does not display my heart rate and my steps displays "undefined" on my watch however, it is tracking on my S9.

Have you tried restarting your device by pressing and holding the left button and bottom right button together for 15 secs (until you see the fitbit logo). If that doesn't work I would suggest changing the clock face to a different one to see if that solves the issue.
