@StarC, it's great to see you in our Fitbit Community. Regarding your inquiry about the reason why your Versa stops tracking your heart rate, there are several factors that affect the heart rate tracking. E.g. your wrist is sweat.
I'd like you to check out and follow the troubleshooting steps that are listed in this help article. After trying these steps, monitor your watch for the next 24 hours and see if it tracks your heart rate properly.

Thanks for taking the time to share your issue. The reason your Versa is not tracking your heart rate or tracking it inaccurately is because FitBit introduced a bug in its last Versa update. You are not the only one experiencing this issue and there are innumerable posts on this forum about the heart rate tracking problems. Unfortunately FitBit refuses to acknowledge the issue, and instead provides reasons or ‘fixes’ that basically imply that it works as long as you don’t use it for anything fitness related (ie. don’t sweat, don’t move, etc).
Also, I wouldn’t expect a fix anytime soon since FitBit is being acquired by Google and will be focused for the next months to year+ on switching over to Googles “wearable OS”.
