Ever since I started the public preview, the app is requesting that I pair my device every day. Not sync – pair. I had no indication it had disconnected, but things are not updating unless I do the pairing.

That's definitely not a typical experience.
Other than constantly pairing your device with the app, what other troubleshooting steps have you tried?
Have you tried uninstalling, then re-installing the Fitbit app?
Have you tried clearing the cache & data for the Fitbit app on your phone? If you try this, you will need to log back into the Fitbit app.
Something else to try is setting up your device in the Fitbit app as if it was a new. You can remove your current device in the app, then add it back just like you did when you first got your device. The other option is to click on Add more devices, select your device, and when you get the prompt asking if you want to replace it with the new one, select Yes.
Setting up your device in the Fitbit app as if it was a new device sometimes will clear out connection issues.
