I have the opposite problem of most in that one text message that came through weeks ago will not disappear from my sense no matter how many times I hit clear

Hi @Kimber333 - Notifications can contain certains formats that cause the watch to crash or not respond to clearing the notification..

If it is really bothering you can make a factory reset and go through the whole tedious setup process again [can take up to an  hour and you may not get back to all your previous settings].

But if your watch is working fine otherwise it may not be worth the effort, especially as there are risks with the process and the watch may no longer work afterwards.
