My sense is not showing each step anymore, it shows the same figure then jumps up to the correct figure in a few mins it if I sync with iPhone? Have reset a few times

This could be a clock face issue if you aren't seeing the steps on the watch face.
Either Swipe up to see the steps [if showing] or Swipe left to go to the Today app to see the information correctly.
If its correct in the Today app and not on the normal watch face its a clock face issue.
If its showing correctly on the watch but not in the App its a syncing issue, pull down on the Fitbit App face to resync.

Thanks - the steps are on the clock face but they are not updating each step, they bulk upload every few mins.

@Jo_Clements Thanks for bringing this to our attention, and for the steps tried prior to posting. Just to confirm, do you mean that your steps are correct on your Sense but they don't update on the Fitbit app? If that's correct, please give a try to the following steps:
