it's now 2023 and this is happening on my sense. i have deleted it, reconnected it, over and over ad nauseum. I have just wasted about 45 minutes trying to get this sorted out. I have a Pixel 6 Pro and Fitbit Sense. Please advise how to avoid "Transcription Error" (before I even speak) or "Unavailable"

If you haven't done so, let me recommend updating the Fitbit app to the latest version. This should resolve the issues with the transcription error displayed when using voice replies on your Sense. To do this:
Once you've installed the update, please confirm if the voice replies start working again on your watch.

Sense voice to text not working after merging with Google account. My wife also has a sense and did not do the merge and her voice to text feature on her Sense still works. Help!

Same here, voice replies quit working after merging with my Google account. Also Google assistant is randomly disconnting again.
I'm now having the same issue. This is the second time I've had this issue. This time, it started after I migrated my account from Fitbit to Google. I've tried all the "standard troubleshooting". Nothing has helped. So far no acknowledgement of the issue from Fitbit.
I generally love all things. Google but I've had technical. glitches with my Sense, off and on, since day 1. I've had to reconfigure and pair it about 5x this past week because of Bluetooth connectivity issues. I don't use the voice reply option often but I want it to work when I need it!

I can't answer speech to text messages or wrist phone calls, I noticed it after I merged Fitbit account to Google account, how can I troubleshoot it or maybe revoke Google account from it?

You can't fix it.
In principle you can't go back to the Fitbit account but some people have, it may depend on how long you wait or do it.
