Most OAuth providers allow an app to have an access token that is for the app itself (rather than through an authorization process). This allows the app to get the data directly from the API. In this scenario there wouldn't be anyone logging into Fitbit as it's he app itself accessing the API and not any particular user.
E.g let's say I wanted to create an app for my personal website which showed my daily steps... in the same way someone would show their latest tweets, or flickr photos, etc.
How do I do this with Fitbit? As the only grants I've seen described in the docs and settings are the ones that require logging in to request a temporary access token for an actual user.

Is this not possible then?
