My fitbit is working and syncing everywhere except for challenges. I've rebooted the Fitbit, I've restarted my iphone, and it shows synced on the website on my dashboard. It was working for a day but then two days ago it stopped and I can't get it to update. Any ideas?

May I ask what phone you have? Your Fitbit One syncs to your account. Your account data should then sync up to the challenges.
Let's first try and refresh the apps data by logging out/in on the Fitbit app.
