Hi @jam0 minimum system for iOS is 13 or higher. What do you have? If it's not 13, then you'll continue to have problems with connecting. Do not remove the app if you're not using 13 or higher as you may not be able to download it again.

Thanks for the detailed information. If you have any other Bluetooth devices paired to your phone, I'd recommend removing them and then please restart your phone and test the behavior of your Charge 3.
If you continue having difficulties to get the Fitbit connected, I'd recommend restarting your Charge 3 by following the instructions here. Once your tracker is restarted, please remove the Bluetooth connection between your phone and your Fitbit device:
