After updating my iPhone 8 to iOS 13.5.1 the FitBit will only connect to the phone to record an activity eg cycling (ie using the phone's GPS) whilst the FitBit app is open and the phone on. As soon as the phone goes off or you close the app a small X in a square box appears on the FitBit's screen at the top left, next to the Distance Travelled figure.
When you finish the Activity it still uploads the very truncated activity to Strava (ie only the bit recorded whilst the FitBit app was running and the iPhone was on).
The FitBit synchs normally otherwise. I have rebooted the iPhone, Charge 3 and restarted the App.

Ok, so after upgrading your iPhone to iOS 13.5 you need to reboot the Fitbit from the screen menus then go into settings for the Fitbit on the iPhone and change the Location setting to something else then back to “always”. If you don’t it’ll only record tracks whilst the iPhone is on and the Fitbit app is running. Done it and mine is working properly again

I think I’ve sorted it: go to Settings, scroll down to the Fitbit settings, go into Location and change it from Always to “While using the app” then back to Always again. I was tracking at the time and the X in the box on the Charge 3 disappeared the moment I changed the setting!
Had lost a couple of activities in the meantime and only tested it on the sofa so far!
