Would it be possible to add popular classes to the exercise options? E.g. All the Les Mills classes. These are really popular and it's really difficult to log exercise classes as there doesn't seem to be any similar options

I'd recommend up-voting and commenting on this feature request to add Les Mills classes to the Fitbit exercise log. Top voted feature requests get relayed to our product team for consideration.
