I can no longer open the "hourly steps" app or the "heart rate" app on my iPhone, so I cannot see my steps logged for the day or the stairs that I have taken. I can only see my steps and current heartrate on my Versa.

Thanks for letting me know that you're unable to see your hourly steps, heart rate and steps logged for the day on your app.
In this case, I would like you to log out from your app and force quit it. After this, log back in and check if you're able to see your information. Regarding your Versa's screen, make sure you're navigating through your screen following the tips mentioned in this article: How do I navigate my Fitbit device's screen?
