I can no longer open the Fitbit app after latest "update", app is unresponsive and closes. Using Pixel 3A. Is anyone else having this issue?

You may try to "clear the cache" of the Fitbit app. The way to do this is somewhat different for each launcher.
Normally you should find this option when doing a long press on the app.
Clearing the cache will probably resolve the problem, if not a reboot would be the next thing to do.
