It is unable to pair and I need to check my device settings.
I have been online and followed all the advice for unpairing my Fitbit, deleting and reinstalling the Fitbit app, turning my bluetooth on and off etc. But nothing works 😖

Let me help you with your Charge 2 syncing issues. Which phone are you using? Is it compatible? You can try the following:
Please be aware that Android users are having issues syncing with Android 9 (Pie), you can check this thread to keep up to date with this.
