AFAIK, days always change at Midnight in the Fitbit universe. What you can decide is when the week starts: on Monday or Sunday.

@jennylauren22 Welcome to our Community! @Dominique is right that currently there is no option to change when the stats resets (always at midnight for now) but I encourage you to vote for the idea about changing this reset time in our Feature suggestion board. The more votes an idea gets the more likely the developers will try to implement it.
Let me know how it goes!

I know I'm about to turn this into a zombie thread. But for all the people googling this after me who work nights: The work around to the day cycle is changing the time zone. In advanced settings turn off auto time zone selection and manually choose a time zone that puts midnight where you need it to be. Yes, your clock display will always be wrong. But it's worth it, to me anyway.
