My day normally starts at 10 AM and ends at 4 AM. Can I set my tracker to begin and end at 6 AM?

Hi @pompanokevin. No you cannot.
Many shift workers have asked for the ability to start the day at a different time, since 2013 at least, and probably earlier, but Fitbit stated a year ago that the feature is 'not currently planned.' You can still vote for it here to help fitbit gauge the extent of continued demand.
An imperfect workaround some folks have suggested is to go to advanced settings in their account, switch off the "automatic" setting for Time Zone and change it manually to a time zone fits with when you start your day.

I'd like to help you out with this @pompanokevin. As @SunsetRunner mentioned, this is not something that is currently planned to be implemented as you can see in the Feature Suggestion here.
However, @SunsetRunner suggestion of changing the time zone is actually a very good idea. The only inconvenient I see with this is that the time on your tracker will be off according to your actual time zone, but if that helps for tracking purposes and you're fine with it, I'd say it's safe to do that.
