I have been able to use the GPS for runs, but not for swimming. If I were to log swim hours at a beach/ocean or lake-side, how do I get the Fitbit GPS to track it and show me a map of my distance?

Adding to what @SteveH said, there is no Fitbit watch supporting open water (GPS) swimming. Even Ionic with built-in GPS doesn't have such a feature.

The Versa range of fitbits doesn't have inbuilt GPS like the Ionic so for it to use GPS tracking you have to have your phone with you so it's not suitable for swim tracking.
