Versa steps says undefined, hourly steps says NaN, heartrate just dash lines. Restarted watch no luck, data I'd showing in the app

It sounds like you are using a third-party clock face. Sometimes they don't keep up-to-date with Fitbit changes. I suggest switching to a clock face "by Fitbit" and see if that works. If so, then you can experiment with other clock faces you like to see which work right.
